Ingredients

Whole okra½ kg
Garlic2–3 cloves
Oil2 tsp + 2–3 tbsp for frying
Coriander powder1¼ tsp
Turmeric powder¼ tsp
Red chilli powder½ tsp
Dry mango powder (amchur)¼ tsp
Salt to tasteapprox. 1 tsp

Method

Wash and wipe the okra completely dry. Make a lengthwise slit in each piece of okra.

Make a paste of garlic. Add 2 tsp of oil, coriander powder, chilli powder, turmeric powder, dry mango powder, and salt to the paste. Mix well. Stuff this mixture into each okra.

Heat 2–3 tbsp oil in a heavy-bottomed pan. Add the stuffed okra. Cover the pan and cook over low heat until the okra is tender (approximately 20–25 minutes). Avoid stirring frequently as it may become sticky. Whole green chillies can also be added alongside the okra.

Serve hot with chappati.
