Malpua
Sweet Saffron Pancakes — dipped in sugar syrup, a festive Sindhi treat
Ingredients
| Plain flour (maida) | 2 cups |
| Baking powder | ½ tsp |
| Milk | ¾ cup |
| Saffron strands, soaked in 1 tbsp milk | a few strands |
| Cardamom powder | ½ tsp |
| Ghee or oil for deep frying |
Sugar Syrup
| Sugar | 1 cup |
| Water | 1 cup |
Method
Mix flour, baking powder, and milk together. Add saffron (with the milk it was soaked in) and cardamom powder. Add more milk if needed to achieve a smooth, pourable consistency. Cover and rest for 2 hours.
Heat ghee or oil for deep frying. Pour one ladleful of batter into the oil in a round shape. Fry on both sides until golden. Immediately dip the hot malpua into the sugar syrup.
Sugar Syrup: Boil water and sugar together until the sugar dissolves completely. Keep warm.
Serve warm, soaked in syrup.
