Ladoo
Sweet Wheat Flour Balls with Ghee, Cardamom & Nuts
Ingredients
| Wheat flour | 2 cups |
| Sugar, powdered | 1½ cups |
| Ghee or butter | 1 cup |
| Cardamoms | 2–3 |
| Dry fruits (almonds, cashews, pistachios) | ½ cup |
Method
Melt about 2 tbsp of ghee in a frying pan and roast the wheat flour, stirring continuously, until it turns a few shades darker and a pleasant aroma develops — this indicates the flour is roasted sufficiently.
Add powdered sugar and cardamoms to the flour. If using granular sugar, powder it first. Heat the remaining ghee and fry the cashew nuts until light brown, then mix into the flour. Add almonds and pistachios.
While the mixture is still warm, shape into balls of the desired size. Work quickly as the mixture firms up as it cools.
Note: Make the ladoos in pure ghee or vanaspati (Dalda) for best results.
