Recipe — Vegetable
Gobi Ji Sabji
Cauliflower & Potato Curry — Serves 6
Ingredients
| Vegetable oil | 5 tbsp |
| Cauliflower | 1 head |
| Potatoes | 2 |
| Tomato, large | 1 |
| Onions, large | 2 |
| Green chillies | 2 |
| Red chilli powder | ½–1 tsp |
| Turmeric powder | ½ tsp |
| Coriander powder | 1 tsp |
| Garam masala powder | ½ tsp |
| Salt to taste |
Method
Heat oil in a pan. Fry chopped onions and green chillies until softened. Add cauliflower florets, chopped tomatoes, chopped potatoes, and all the spices. Mix well and allow to cook, covered, over medium-low heat until the vegetables are tender.
Garnish with finely chopped coriander leaves and garam masala powder. Serve hot.
